Caramelized Onion, Apple and Gruyere Tarts

Ingredients
- 2 tablespoons vegetable oil
- 1 large onion, thinly sliced
- 4 ounces bella mushrooms
- 2 tablespoons unsalted bvutter
- 1 1/2 Granny Smith apples cut into 1/2 inch cubes
- 1 teaspoon sugar
- 1 1/2 ounces Gruyere cheese, coarsely grated
- 2 tablespoons minced fresh chives
- 1/2 teaspoon dried thyme
- 1 package frozen puff pastry dough
- 1 egg beaten with 2 tablespoons water

Preparation
Step 1
Saute the onions and 1 teaspoon salt until the onions are golden brown, about 30 minutes. Transfer to a large bowl and let cool In same skillet, sauté mushrooms for 5 minutes, set aside.
Preheat oven to 400 degrees
In the same skillet, melt the butter, add the apples and sugar and stir to coat the apples. Cook, stirring until the apples are just starting to caramelize and have softened, about 10 minutes. Transfer to the bowl with the onions and mushrooms. Stir in the cheese, chives, thyme and 1/8 teaspoon pepper.
Cut the puff pastry into 2 inch squares and place on the prepared baking sheets. Brush with egg mixture and place a heaping tablespoon of the filling in the center of each square. Season with slat and pepper.
Bake, rotating the baking sheets from top to bottom and front to back after 12 minutes. Cook an additional 13 minutes. Serve at room temp
