Ingredients

  • Croutons:
  • 1/2 stick butter, melted
  • 1/2 cup olive oil
  • 1 loaf French bread (I used 2 loaves)
  • 1 tablespoon Italian seasoning
  • 1 tablespoon Kosher salt
  • 1 tablespoon black pepper
  • 2 teaspoons red pepper flakes
  • Dressing:
  • 1/2 cup olive oil
  • 2 garlic cloves
  • 4 whole anchovy fillets
  • 2 tablespoons Dijon Mustard
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Worcestershire sauce
  • Juice from 1/2 lemon
  • dash of salt
  • fresh green pepper
  • 1/4 cup fresh shredded parmesan cheese
  • Salad:
  • Romaine lettuce
  • Parmesan cheese shavings

Preparation

Step 1

Croutons:

Preheat oven to 250 degrees F.
Melt butter with olive oil.
Cut bread into 1 to 1-11/2 inch cubes.
Drizzle butter mixture over bread cubes.
Toss until covered.
In a bowl,Stir together; Italian seasoning, salt, pepper and red pepper flakes.
Sprinkle over the bread cubes.
Toss until covered.
Spread seasoned bread cubes in a single layer on a baking sheet.
Bake 45 minutes.
Remove from oven and set aside to cool.

Caesar salad:

Add olive oil, garlic, anchovies, Dijon mustard, Balsamic Vinegar, Worcestershire sauce, lemon juice, salt and pepper to blender.
Blend until totally smooth.
Add shredded parmesan cheese.
Blend mixture until smooth.
Cut lettuce into bite size pieces.
Drizzle 3/4 of the dressing on lettuce.
Toss to cover.
Sprinkle Parmesan cheese shavings.
Toss again.
Add croutons.
Serve.
