Banana Bread Waffles

By

Since these waffles have some sweetness from the bananas and little caramelized sugar bites from the pearl sugar, they don’t need any extra syrup (perfect for eating on the go!). I make a batch on the weekends when I have a little more time, toss them in the freezer (once they’re cool), and then pop them into the toaster when we’re ready for them. If you want to add a little extra deliciousness to these waffles, they are fantastic as a waffle sandwich with a little peanut butter or cream cheese spread in between them.

Preparation

Step 1

1.In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and nutmeg; set aside.
2.In a large bowl, stir together buttermilk, vanilla, bananas, and melted butter.
3.Add flour mixture to buttermilk mixture, and stir until just combined.
4.Spray waffle iron with nonstick cooking spray and add batter according to waffle iron’s directions (I have a 4-square waffle iron, and I used 1 cup of batter per waffle).
5.Sprinkle waffle with pearl sugar or broken sugar cubes.
6.Cook waffles according to your waffle iron’s directions.
7.Be careful removing waffle from iron – the sugar will caramelize and is extremely hot.
