Buckwheat Quinoa Apple Maple Bake

Ingredients
- 1/2 cup quinoa flakes
- 1/2 cup buckwheat groats, ground into flour in a blender
- 1 tbsp chia seeds
- 1 tsp cinnamon
- 2 tbsp raisins
- 1 tsp vanilla extract or powder
- 2 tbsp applesauce (unsweetened)
- 2 tbsp maple syrup
- 1 1/4 cup almond milk (or milk of choice)
- 1 apple, diced (leave peel on if organic, peel if not)
- 2 tbsp walnuts, chopped

Preparation
Step 1
1. Preheat oven to 350 F. In a bowl, combine quinoa flakes, buckwheat flour, chia seeds, cinnamon and raisins.
2. Stir in vanilla, applesauce, maple syrup and almond milk. Let sit while you dice the apple, to give the chia seeds a chance to absorb some of the liquid (around 10 minutes is good).
3. Fold in apple chunks and divide between two mini bake pans (grease them well with coconut oil first). Sprinkle chopped walnuts evenly on top of each bake. Note: you can also bake this together in one larger pan. Baking times may vary, however.
4. Bake for 50 minutes-1 hour, or until centre is firm and no longer wet. Let cool and then turn out onto plates and serve.
