Ingredients

  • 2 heads of broccoli (1 bunch), stems removed
  • 1 head cauliflower, stems removed
  • 2.5 C shredded carrots
  • 1/2 C sunflower seeds
  • 1 C currants
  • 1/2 C finely chopped fresh parsley
  • 1/2 C raisins
  • 4-8 Tbsp fresh lemon juice, to taste
  • 1/2 Tsp Kosher salt
  • Lots of pepper
  • kelp granules or Herbamare (optional), to taste
  • pure maple syrup, to drizzle on before serving

Preparation

Step 1

In a food processor process the broccoli (no stems) until fine, add to a large bowl
Now process the cauliflower (no stems) until find, add to a large bowl
Do the same to the carrots
Stir in the sunflower seeds, currants, raisins and parsley. Add lemon juice and seasonings to taste
Drizzle with maple syrup to taste

Note: I saved the stems for a stir-fry later in the week
