Ingredients
- 1 tablespoon olive oil
- 1 pound ground round (or 2 chopped boneless chicken)
- 1/2 teaspoon salt
- 1/4 tsp. pepper
- 1 can (14.5 oz) diced tomatoes with basil, garlic and oregano
- 1 can (14.5 oz) diced tomatoes
- 1 can beef (or chicken) broth
- 1 pkg. (16 oz) frozen mixed vegetables
- 1 bay leaf
- 1 cup uncooked macaroni, or spaghetti broken into 1 inch pieces

Step 1
Brown meat in oil over medium high heat. Add salt and pepper. Cook, stirring, until browned. Stir in canned tomatoes with liquid and broth, frozen veggie and bay leaf. Fill both tomato cans with water and add to pot. Bring to boil, stirring, 304 mintues, then reduce heat, cover and let simmer for 20 minutes (or up to 1 hour). Stir in pasta nad cover pot. Let simmer until thickened somewhat and pasta is al dente, 8-10 minutes.
