  • Cooked chicken meat, shredded or cubed
  • 1 (10 oz) pkg
  • Frozen chopped spinach, thawed and squeezed dry

  • Small onion, chopped fine

  • Shredded mozzarella cheese
  • 1/2 cup
  • Grated parmesan cheese
  • 1/2 cup grated mozzarella cheese

Preparation

If using zucchini noodles: Preheat oven to 425 degrees. Spray a cookie sheet with non-stick cooking spray; arrange zucchini slices and season with salt and pepper. Bake zucchini slices for 5 minutes on each side, and then remove from oven. Set zucchini slices aside and lower oven temperature to 375 degrees.

If using regular lasagna noodles: Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8-10 minutes. Drain, and rinse with cold water.

Oven Preparation:

Preheat oven to 375 degrees. Spray a large casserole dish with cooking spray. In a medium bowl, mix everything (except for noodles/zucchini) together until well combined. Spread ½ of the chicken mixture on the bottom of the casserole dish. Layer zucchini or noodles on top of chicken layer. Repeat once. Sprinkle cheese on top and cover with foil. Bake for 55 minutes, remove foil and bake an additional 5-10 minutes or until cheese is lightly golden brown.

Crockpot Preparation: (Note for this method you don’t need to pre-cook lasagna noodles, but you do need to pre-cook zucchini noodles if you don’t want lasagna to become watery. There will be a small amount of water with the zucchini noodles in the Crockpot, but it still tastes fabulous!).

Spray inside of Crockpot with cooking spray. In a medium bowl, mix everything (except for noodles/zucchini) together until well combined. Spread ½ of the chicken mixture on the bottom of the Crockpot. Layer zucchini or noodles on top of chicken layer. Repeat once. Sprinkle cheese on top and cover Crockpot. Cook on low for 6-8 hours or on high for 4 hours.
