Ingredients

  • Cake base:
  • 3 tbsp coconut flour
  • 1.25 tsp baking powder
  • Pinch sea salt
  • 3/4 cup unsweetened almond milk
  • 1 whole egg
  • 1 egg white
  • 3 packets Birthday Cake Flex Flavor
  • Chocolate cupcake ingredients:
  • 1 scoop Brownie Batter protein powder
  • 2 tbsp stevia in the raw
  • 4 tsp unsweetened cocoa powder
  • 4 tsp water
  • Vanilla cupcakes ingredients:
  • 1 scoop Angel Food Cake protein powder
  • 2 tbsp stevia in the raw
  • 1.5 tsp vanilla extract
  • 2 tsp water
  • Chocolate frosting ingredients:
  • 1 scoop Brownie Batter protein powder
  • 1 tbsp stevia in the raw
  • 1/2 tsp unsweetened cocoa
  • 1/4 cup non-fat plain Greek yogurt
  • Vanilla frosting ingredients:
  • 1 scoop Devotion Angel Food Cake protein powder
  • 1 tbsp stevia in the raw
  • 1/4 cup non-fat plain Greek yogurt
  • 1/2 tsp vanilla

Preparation

Step 1

Preheat oven to 350 degrees. Mix cake base in one bowl. Mix chocolate and vanilla ingredients in 2 separate bowls, for a total of 3 bowls. Mix half cake base into each of the other bowls. Stir until fully incorporated.

Put 6 cupcake wrappers into a muffin tin. Spray with Pam before adding batter. Fill 3 wrappers with the chocolate batter, and 3 wrappers with your vanilla batter. Bake for 12 – 15 minutes or until cooked through.

Makes 6 cupcakes. 3 chocolate, 3 vanilla.

For frosting, mix frosting ingredients in 2 separate bowls. And spread frosting evenly over completely cooled cupcakes.
