Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 5 eggs
  • 1 cup buttermilk
  • 2 teaspoons real vanilla
  • 5 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 3 cups fresh or frozen blueberries (small wild blueberries work best)

Step 1

In large bowl, cream butter and sugar. Add eggs, buttermilk and vanilla; mix well. Combine flour, baking soda, baking powder and salt in another bowl; then stir into creamed mixture just until moistened. Fold in blueberries (batter will be thick). Fill greased or paper lined mini muffin cups with about a tablespoon of batter. Sprinkle with additional sugar, if desired. Bake at 400 degrees for 10-15 minutes or until muffins test done. Cool for 5 minutes on wire rack before removing from pan.
