  • 1 lean pork loin roast (2 1/2 lbs)
  • 3 Tbsp Dijon mustard
  • 1 Tbsp low-fat buttermilk
  • 1 c breadcrumbs
  • 2 Tbsp pepper
  • 2 tsp crushed mix peppercorns
  • t tsp chopped thyme
  • 1/4 tsp salt
  • CREAMY PEPPERCORN SAUCE
  • 3/4 c buttermilk
  • 1/3 c fat free sour cream
  • 3 Tbsp Parmesan cheese, grated
  • 3 Tbsp mayo
  • 1 1/2 Tbsp lemon juice
  • 1 1/2 tsp mixed peppercorns, crushed
  • 1/4 tsp salt

Preparation

Step 1

Preheat oven to 325 degrees. Combine mustard and buttermilk. Spread over roast. Combine breadcrumbs, pepper, salt, thyme, and peppercorns in a bowl. Press mixture evenly over roast.

Place roast on broiler pan coated with cooking spray. Bake for 2 hours and meat thermometer reads 160 degrees. Let stand 10 minutes before slicing.

Combine all ingredients for the creamy peppercorn sauce in a bowl. Serve with pork loin slices.
