Ingredients
- 1 lean pork loin roast (2 1/2 lbs)
- 3 Tbsp Dijon mustard
- 1 Tbsp low-fat buttermilk
- 1 c breadcrumbs
- 2 Tbsp pepper
- 2 tsp crushed mix peppercorns
- t tsp chopped thyme
- 1/4 tsp salt
- CREAMY PEPPERCORN SAUCE
- 3/4 c buttermilk
- 1/3 c fat free sour cream
- 3 Tbsp Parmesan cheese, grated
- 3 Tbsp mayo
- 1 1/2 Tbsp lemon juice
- 1 1/2 tsp mixed peppercorns, crushed
- 1/4 tsp salt

Step 1
Preheat oven to 325 degrees. Combine mustard and buttermilk. Spread over roast. Combine breadcrumbs, pepper, salt, thyme, and peppercorns in a bowl. Press mixture evenly over roast.
Place roast on broiler pan coated with cooking spray. Bake for 2 hours and meat thermometer reads 160 degrees. Let stand 10 minutes before slicing.
Combine all ingredients for the creamy peppercorn sauce in a bowl. Serve with pork loin slices.
