Ingredients

  • 4 medium zucchini, trimmed
  • 1/2 cup flour
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 3 large egg whites, lightly beatn
  • 1 1/2 cups panko bread crumbs
  • 3/4 cup grated parmesan

Preparation

Step 1

Preheat oven to 475 degrees.

Line a baking sheet with parchment paper. Cut the zucchini into steak fry sized pieces. In a pie plate stir together flour, salt, garlic powder and pepper. In another bowl, beat the egg whites till frothy. In another pie plate combine the panko and parmesan.

Dredge the zucchini in the flour mixture, the egg mixture and then the panko mixture. Place on baking sheet and bake for 12-16 minutes - turning once.
