Spinach Cake Muffins - Double recipe

Ingredients
- 1 cup unsweetened applesauce
- 2 large egg
- 4 teaspoons vanilla extract
- 2 cups fresh spinach, packed
- 2/3 cup sugar
- 1/4 cup vegetable or canola oil (coconut)
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
Preparation
Step 1
Preheat oven to 350°F.
Place the first 6 ingredients in a food processor and puree.
Place the remaining ingredients in a separate bowl and combine.
Pour the spinach puree in a large mixing bowl.
Slowly mix the dry ingredients into the wet until combined.
Scoop batter into a greased mini muffin tin, filling each cup 2/3 of the way.
Bake for 12 minutes.
Serve and enjoy!
