Ingredients

  • 1 cup margarine
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 2 1/2 cup flour
  • 3/4 cups cocoa
  • 1 tsp. soda
  • 1 (9oz.) pkg. Rolo caramels
  • 1 cup chopped pecans (divided)
  • 1 Tbsp. sugar
  • 1 cup vanilla coating wafers or chopped almond bark

Step 1

Combine flour, cocoa, and soda: set aside. Cream margarine and sugars. Add eggs and vanilla, beating well. Stir dry ingredients, mixing well. Stir in 1/2 cup pecans. Chill dough 1 hour for easier handling.

Meanwhile remove wrappers from caramels; set aside.

Combine 1 Tbsp. sugar and remaining chopped pecans, set aside.

Turn out dough on waxed paper and form into 4 sections. Divide each section into 12 balls. Enclose a Rolo caramel in the center of each ball, covering well. Dip the top of each cookie into nut and sugar mixture. Place on ungreased cookie sheet.

Bake at 375* for 8-10 minutes. Be careful not to overbake. Cool on baking sheet a couple of minutes. Then remove to cooling rack. Melt candy coating over hot water or low heat and drizzle over cookies.
