  • Bars Garnish:
  • 2 Cups pitted dates
  • 1 cup raw cashews
  • 4 Tbsp raw pumpkin seeds
  • 4 Tbsp unsweetened shredded coconut
  • 2/3 cup began vanilla protein powder
  • 2 tsp cinnamon
  • 1 tsp pumpkin spice
  • 1/2 cup pure pumpkin puree
  • 4 Tbsp raw pumpkin seeds
  • 4 Tbsp toasted coconut flakes
  • 4 Tbsp chopped pecans

Preparation

Step 1

1. Combine all ingredients in a food processor and process until smooth.
2. in a 9x13 baking pan, place parchment paper on the bottom
3. Add in the energy bar batter and press down evenly
4. Sprinkle the garnish and press into the bars
5.Freeze for 2-3 hours or until solid, cut into bars and wrap in handywrap
6. Store in the fridge or freezer
