Ingredients
- 2/3 cup butter or margarine
- 1/2 cup brown sugar, packed
- 1/2 tsp lemon extract
- 2/3 cup sifted flour
- 1 1/2 cup quick oats, uncooked

Preparation
Step 1
Preheat oven to 325°
Cream butter and sugar together. Add lemon extract, flour, and oats. Mix till oats are well blended.
Shape into small balls on greased baking sheet, flatten balls with a fork.
Bake 13-15 minutes until light golden brown. Cool slightly before removing from tray.
