Ingredients
- 2 Tbsp olive oil
- 1 medium yellow onion, diced
- 2 stalks celery, thinly sliced
- 1 medium jalapeno, seeded and diced
- 4 cloves garlic, minced
- 3/4 lb. chicken breast, grilled and diced
- 6 cups chicken broth
- 1 (14.5 oz.) can diced tomatoes
- 1 tsp oregano
- 3/4 tsp cumin
- 1 medium lime,juiced
- 1/4 bunch cilantro, rinsed well and leaves chopped
- 1 medium avocado, sliced
- tortilla strips

Preparation
Step 1
Cook the onion, celery, jalapeno, and garlic in olive oil over medium heat for about 5 minutes or until tender.
Add the chicken broth, canned tomatoes, oregano, and cumin to the pot. Bring the whole pot up to a boil over high heat then reduce the heat to low, place a lid on top, and let simmer for 20 minutes.
After simmering, add lime juice, grilled chicken; return to a simmer then and cilantro leaves. Give it a quick stir, and serve.
Add a few avocado slices and tortilla strips to each bowl.
