Roasted Asparagus

This roasted asparagus is so delicious you probably won't have any leftovers. But if you do, chop them up and toss into cooked pasta, scrambled eggs, rice or couscous.

- 2 tablespoon(s) olive oil
- Kosher salt and pepper
- Lemon wedges, if desired

Preparation
Step 1
Heat oven to 375°F. On a rimmed baking sheet, toss the asparagus, oil and 1⁄2 tsp each salt and pepper.
Place half of the asparagus on a second baking sheet. Roast both baking sheets, shaking them occasionally, until asparagus is tender and slightly charred, 10 to 12 minutes. Serve with the lemon wedges, if desired.
