Thai Chicken Pizza 1 Picture

Ingredients

  • 3/4 cup rice vinegar
  • 1/4 cup firmly packed light brown sugar
  • 1/4 cup low-sodium soy sauce or tamari
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon peeled and minced fresh ginger
  • 1/4 teaspoon dried crushed red pepper
  • 2 garlic cloves, minced
  • 1/2 Basic Pizza Dough or 1 uncooked prepared pizza crust
  • 1 tablespoon extra virgin olive oil
  • 1 cup shredded grilled or rotisserie chicken
  • 1/2 cup (2 ounces) shredded Swiss cheese
  • 1/2 cup (2 ounces) grated Parmesan cheese
  • 3 green onions, chopped
  • 1/4 cup fresh cilantro leaves

Preparation

Step 1

1. Preheat oven to 450°. (For a crispy crust, preheat a pizza stone on the lowest rack in the oven.)

2. Combine first 7 ingredients in a skillet over medium-high heat. Bring to a boil, reduce heat, and simmer, stirring often, 5 minutes or until thickened and reduced (Mixture should be thick like pizza sauce.)

3. Roll dough to 1/4-inch thickness on a floured baking sheet or pizza peel. Brush edges of crust with olive oil. Spread sauce to edges of crust; top with chicken and cheeses.

4. If desired, transfer pizza to pizza stone dusted with cornmeal or semolina flour; bake 10 to 12 minutes. Remove from oven; sprinkle with green onions and cilantro.
