Ingredients
- Marinade
- 3 cups apple juice
- 2 cups red wine vinegar
- 2 cups red vine
- 1 cup onion, sliced
- 3/4 cup carrots, sliced
- 1/2 cup celery, sliced
- 1/2 cup brown sugar
- 5 cloves garlic
- 1 tablespoon salt
- 1 teaspoon cracked peppercorns
- 2 bay leafs
- Sauerbraten
- 1 5-pound trimmed beef brisket
- 3 ounces salad oil
- 2 cups beef stock
- 1/2 pound ginger snaps

Step 1
For Marinade
1. Combine everything in a bowl.
For Sauerbraten
2. Remove all fat and tissue from the brisket.
3. Place in a container that is just big enough to hold it and the
marinade. Place the marinade over the beef and marinate the beef
for 3 days in the refrigerator.
4. In a heavy stockpot, heat the oil and brown the meat on all sides .
Add the marinade and the beef stock to the pot, cover and simmer
for 1/2 hours or until the beef is tender.
5. Strain off the stock and remove the beef .
6. Crumble the ginger snaps into the stock and stir until dissolved .
Strain again. Slice the beef and serve with the ginger snap sauce .
