  • 3/4 cup butter
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1-1/2 teaspoons vanilla
  • 1/4 cup pumpkin
  • 1-3/4 cups flour
  • 1 cup old fashioned rolled oats
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup Caramel Bits or chopped caramel
  • 3/4 cup unsweetened coconut flakes
  • caramel sauce, vanilla ice cream and additional coconut flakes and rolled oats to garnish, if desired

Step 1

Instructions
Preheat oven to 350 degrees.
In a 10″ cast iron skillet, melt butter over medium-low heat. Stir in sugars and vanilla and remove from heat. Let cool for 5 minutes.
Stir pumpkin into butter and sugar mixture.
Stir in flour, oats baking soda and salt until combined.
Stir in Caramel Bits and coconut flakes.
Bake for 25-30 minutes, until beginning to brown, but still soft in the center.
Served topped with caramel sauce, additional coconut flakes and rolled oats, caramel sauce and a scoop of vanilla ice cream, if desired.
