Ingredients
- 48 0z. beef short ribs
- 1 chopped onion
- 2 bay leeaves
- 3 cloves garlic (Smashed)
- 2 sprigs rosemary
- 2 sprigs thyme
- 4 whole cloves
- 2 tbsp. tomato paste
- 1/4 cup white wine
- 3 tbsp. veg. oil
- 3/4 cup apple cider vinegar
- 3/4 cup brown sugar
- 4 cups beef stock
- 2 tbsp. black pepper

Preparation
Step 1
Season ribs with salt & pepper. Sear ribs in heavy saucepan in oil. Brown well all over. Remove ribs - add herbs & veg. to pan. Brown well. Add tomato paste & cook about 2 minutes. De glaze pan with vinegar. Add brown sugar & bring to simmer. Add wine, stock & pepper, bring to simmer. Skim off fat, add ribs \7 cover loosely. Cook in 300 oven for about 3 hours. Remove about half the liquid after 2 hours, place in another saucepan abd reduce to glaze consistency.
To serve, remove ribs from pan and pour glaze over.
