Ingredients

  • Crust:
  • 1 cup and 2 T. flour
  • 1/8 tsp. salt
  • 1/3 cup oil
  • 2 T. water
  • Filling:
  • 1 1/2 c. grated swiss and cheddar cheese mix.
  • Fresh basil
  • Zucchini
  • Green pepper
  • Mushrooms
  • Asparagus
  • Thyme
  • Parmesan cheese
  • 4 eggs
  • 1 1/2 c. milk
  • 3 T. flour
  • 1/4 tsp. salt
  • 1/4 tsp. dry mustard
  • Avocado

Preparation

Step 1

1. Make Quiche crust by mixing flour and salt in a bowl. Using a fork, add oil and continue stirring until mixed. Sprinkle water on top. Stir until well mixed and dough rolls into a ball. Spread in a quiche dish across the bottom and up the sides. Prick with fork and bake at 425 for 10 minutes. Cool slightly.

2. Put basil on bottom of cooked quiche crust.

3. Cover with 1/2 swiss/cheddar cheese mix.

4. Stir fry zucchini, green pepper, mushrooms, and asparagus (and any other vegetable) and layer on vegetables.

5. Top with remainder of swiss/cheddar cheese.

6. Make a custard of 4 eggs beaten, milk, flour, salt, and mustard. Pour over top.

7. Bake at 375 for 40-45 minutes, or until solid in the center when jiggled.

8. Top with avocados.
