Cake Mix Christmas Cookies

- 1 box vanilla cake mix
- 1 tsp. baking powder
- 2 large eggs
- 1/2 c. canola oil
- 1/2 c. Sprinkles

Preparation
Step 1
Preheat oven to 350 degrees F and line two baking sheets with parchment. In a large bowl, whisk together cake mix and baking powder. In another bowl, whisk together eggs and oil. Add wet ingredients to dry and stir until fully combined.
Add sprinkles and stir until mixed in (the more you stir, the more the colors will stain the dough).
Using your hands, form small balls of dough and transfer to prepared baking sheets.
Bake 7 to 9 minutes. Let cool slightly on baking sheet, then transfer to a wire rack to let cool completely.
To Freeze:
Prepare dough per instructions on your favorite Cake Mix Cookie Recipe.
Allow dough to chill in refrigerator for approx. 1 hour.
Roll dough into balls, and place on cookie sheet. {you can squeeze in quite a few, as you won’t need to leave room for them to spread}.
Place cookie sheet in freezer for at least 1 hour, or until cookie dough balls have frozen.
Carefully pop frozen cookie dough balls off of cookie sheet, and place in freezer ziploc bag.
When ready to bake… place frozen cookie dough balls on cookie sheet {allowing room for cookies to spread when baking}, and set aside… allowing them to come to room temperature. {approx. 15 minutes}
Once they have thawed, bake as normal per original Cake Mix Cookie recipe instructions. As a reminder, you may want to write on the bag the date they were frozen, the temperature to bake at, and the length of baking time. ENJOY!
Notes:
Cookie dough will last up to 3 months in the freezer.
