Ingredients

  • 10 oz whole, unsweetened frozen strawberries
  • 10 oz frozen sweetened raspberries
  • 1/2 c. cranberry cocktail juice
  • 3 T. cornstarch
  • 3 T. cold water
  • 1/2 t. almond extract

Step 1

Place frozen berries in a deep saucepan. Add juice. Over medium high heat, bring just to a boil. Reduce heat and simmer until berries are very soft, about 20 minutes.

Pour berry mixture into a fine sieve held over a bowl. With wooden spoon rub until all pulp is pressed through sieve. Scrape strained berries on outside of sieve into bowl.

Whisk mixture to combine pulp and liquid well. Return to pot. Mix cornstarch and water in small bowl. Stir into berries and add flavoring.

Over medium heat, cook until translucent, stirring constantly. When thick - about 1 to 2 minutes - remove from heat before it comes to a boil. Pour into dish. When almost cool, refrigerate. Place saran on top to touch surface of pudding. Let sit 20 minutes before serving. Can be made 2 days before serving.
