Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 tbsp chili powder
  • 2 tbsp tomato paste
  • 2 cups chicken broth
  • 1/2 tsp salt
  • 1 box (225g) roughly 1 cup Quinoa
  • 1 can (14oz) black beans, rinsed & drained

Preparation

Step 1

In a saucepan heat oil over medium-high heat.

Add onions and and garlic, cooking for 2-3 minutes, stirring often.

Add chilli powder, cook, stirring for 30 seconds. Then add tomato paste, cook and stir for another minute.

Add broth and salt. Bring to a simmer over medium heat.

Slowly add in Quinoa & black beans, reduce to low, cover and cook for 20 minutes.

Let stand covered for 5 minutes. Fluff with fork and serve!
