Step 1
Makes 4 cups
Place a steamer basket into a large pot, pour in a few inches of water (make sure the water is below the bottom of the basket) and set it over high heat. Add the cauliflower and steam, covered, for 9 to 11 minutes, until fork tender. Remove from heat and blend cooked cauliflower with ¼ cup of water until smooth, adding more water
as necessary.
