Ingredients

  • 1 15oz can chickpeas, rinsed well and drained
  • 1/3 cup WELL-STIRRED tahini
  • 4 * tablespoons fresh lemon juice
  • 4 * tablespoons extra-virgin olive oil
  • 4 head of garlic
  • 1 1/4 tsp cumin
  • 5 tablespoons HOT water
  • salt
  • pepper
  • Plus a little extra

Preparation

Step 1

1. Cut off the top of the garlic head, sprinkle with olive oil, salt and pepper and bake at 400 for 45 minutes.

2. Squeeze roasted garlic out of shell and mix with chick peas in a food processor.

3. Add lemon juice, salt, pepper, cumin, olive oil and water and blend.

4. Add tahini and blend.

5. Add more olive oil and/or water if the consistency is off and season to taste.
