Very good and quick. When artichokes are unavailable, substitute high fiber immune boosters like broccoli, beets, spinach, sweet potatoes or mushrooms.

Ingredients
- 10 small brussels sprouts
- 2 artichokes, trimmed, quartered and cored
- 2 large carrots, sliced
- 4 tsp. (plus a little more) olive oil
- 12 fresh sage leaves (or a couple more) (cut them up a little if they are large)
- 4 tablespoons roughly chopped walnuts
- salt and pepper

Preparation
Step 1
Bring a med. saucepan of salted water to boil. Add brussels, artichoke and carrot; boil for 5 minutes, then strain and pat dry with a paper towel. Halve Brussels.
In a med. skillet, heat oil and sage over med. heat for 1 minute. Add blanched veggies and cook, stirring occasionally, for 10 minutes. Remove from heat, add walnuts and stir to combine. Season with s&p and serve warm.
