Ingredients
- Large loaf of crusty bread (wider baguette works great)
- Sliced tomatoes
- Roasted red peppers
- Marinated artichoke hearts (I use artichoke bottoms)
- Red onion
- Olives
- Capers
- Basil leaves
- Anchovies (opt)
- Oil packed tuna (or get good tuna, cook it and mix it with olive oil) or roasted chicken (we prefer tuna)
- Olive oil
- Red or white wine vinegar
- Salt and pepper

Preparation
Step 1
Halve baguette and remove some of the crumb from each half to make it slightly hollow. Build the sandwich, layering on ingredients from list above. I would put tomato first, then tuna and then carry on.
Sprinkle with salt and pepper, drizzle with red or white wine vinegar and douse with olive oil.
Close the sandwich, wrap well in aluminum foil and weight it down with something heavy (I used a cookie sheet with a cast iron skillet on top) a skillet, a milk jug, a rock, a brick, whatever.
Refrigerate overnight or for up to 24 hours. Cut into pieces and service.
