Ingredients

  • 4 1/2 cups white sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons salt
  • 8-1/2 cups water
  • 2 cups water
  • 1 cup cornstarch
  • 3 Tablespoons lemon juice
  • 2 drops yellow food coloring, optional
  • 6 pounds (10 cups sliced)apples

Preparation

Step 1

Sterilize canning jars, lids and rings.

In a large pan, mix together sugar, cinnamon and nutmeg. Add salt and 8-1/2 cups hot water and mix well. Place pan over low heat.

Mix/whisk 2 cups water, 3 Tbsp. Lemon Juice and corn starch in a separate bowl. Set aside.

Peel, core, and slice apples. Pack the sliced apples into hot canning jars, leaving a 1/2 inch headspace.

Bring the sugar mixture almost to a boil. Then stir/whisk in quickly, the cornstarch mixture and cook until the white of the cornstarch disappears and mixture is thick and bubbly. Remove from heat and add food coloring (if desired).

Fill jars with the hot syrup, and gently remove air bubbles with a spatula.

Put lids on and process in a water bath canner for 20 minutes.
