EGG - Udon Noodle Soup with Fresh Spinach & Egg

08/10/16 - Good basic soup, but nothing spectacular. I used turkey from the Thanksgiving broth making and didn't do the egg, which might improve it overall. Also, I used my prepared Asian broth; which may have overpowered the flavours.

Ingredients
- 1 1/2 cups chicken broth or homemade Asian broth
- 3/4 tablespoon minced ginger (about 1/2” cube)
- 3/4 tablespoon minced garlic (about 1-2 large cloves)
- 1 shallot, peeled and diced
- 1/2 tablespoon soy sauce
- 1 teaspoon mirin
- 1 small carrot, peeled and sliced thin on the diagonal
- 1 package fresh udon noodles
- 2 ounces cooked chicken or turkey, shredded, optional
- 2 ounces baby spinach leaves
- 1 large egg
- 1 scallion, chopped
- shichimi togarashi, to garnish

Cook the noodles in boiling salted water until just tender, drain and place in the bottom of a serving bowl. Add the shredded chicken to the noodles in the bowl, if using.
To the saucepan, add the chicken broth, ginger, garlic, shallots, soy sauce, and mirin and bring to a boil over medium-high heat. Reduce the heat to a medium-low and simmer for 3 minutes. Add the carrot and continue to simmer until carrot is tender, about 5 minutes.
Add the spinach and swirl into the broth to cook. Then gently crack the eggs, cover the pot with a lid and continue to simmer for 3 minutes. Turn off the heat to allow the eggs to finish cooking.
Remove the egg to the serving bowl with a spoon and pour the broth and vegetables over all.
Garnish with scallions and shichimi togarashi and serve.
