Ingredients
- 6 C water
- 1 lb ground beef (uncooked)
- 3/4 C medium barley
- 2 large carrots, diced
- 2 large stalks of celery, chopped (with leaves)
- 1 medium onion, chopped
- 1 T dried parsley
- 2 t salt
- 1/2 t pepper
- 1 small can diced tomatoes

Preparation
Step 1
Mix everything in a large soup pot, stirring to break up the beef. Cook over medium heat for one hour or until barley and veggies are soft.
Can be frozen; leftovers are even better.
