Ingredients
- 1 pound ground round
- 1 cup coarsely chopped onion
- 1 chopped red bell pepper
- 2 tablespoons ground red pepper
- 1-1/2 cups spicy-hot vegetable juice
- 1 cup frozen whole-kernel corn
- 1 cup beef broth
- 1 15-ounce can black beans, rinsed and drained
- 6 tablespoons minced fresh cilantro
- 6 tablespoons (1-1/2 ounces) shredded sharp Cheddar cheese
- 6 tablespoons sour cream

Preparation
Step 1
Cook beef in large nonstick skillet over medium-high heat until browned,
stirring to crumble. Add onion, bell pepper and red pepper; saute 10 minutes
or until vegetables are tender. Add juice, corn, broth and beans; bring to
boil. Reduce heat and simmer for 10 minutes. Spoon into each of 6 soup bowls
and top each serving with cilantro, shredded cheese and sour cream. Makes 6
servings.
