Ingredients

  • 1 egg
  • 1/2 cup sugar
  • 1/2 tsp. grated lemon rind
  • 1 cup flour
  • 1/4 cup milk
  • pinch of salt
  • 1 tsp. baking powder
  • 1/4 cup melted butter
  • 1 tsp. vanilla
  • 3 cups sliced peaches
  • 1/3 cup sugar (reserved for sprinkling on top)
  • 1 tbsp. lemon juice
  • Nutmeg
  • Cinnamon

Preparation

Step 1

Mix together egg and 1/2 cup sugar. Add 1/2 tsp. grated lemon rind. Mix flour, milk, salt, baking powder, butter and vanilla together and pour into a greased baking dish. Place 3 cups of sliced peaches on top of batter and cover with 1/3 cup sugar. Add 1 tbsp. lemon juice and sprinkle nutmeg and/or cinnamon on top. Bake at 350 for 30 minutes or until slightly browned.

Can also make with blueberries instead of peaches.
