Ingredients

  • 1 lb boneless chicken breast, sliced into thin 1" pieces
  • 1/4 cup soy sauce
  • 1 small onion, diced
  • 2 Tbsp cooking oil
  • 2 tsp curry powder
  • 3 scallions, sliced
  • 1 4-oz can sliced mushrooms
  • 1/2 cup celery, sliced
  • 1 Tbsp cornstarch
  • 1/2 cup chicken broth

Preparation

Step 1

Marinate chicken in soy sauce for 20 minutes. Mix cornstarch with broth and set aside.
Heat oil in pan, add curry and onion, and stir fry until onion is translucent. Add chicken and stir fry until chicken is cooked, about three minutes. Remove chicken from pan with slotted spoon and set aside.
Add scallions, celery, and mushrooms to the pan and stir fry until tender. Return chicken to the pan and add cornstarch mixture. Cook and stir until thick and bubbly. Serve with rice.
