Ingredients
- 2 cups marinara sauce
- 1 pound manicotti, cooked
- 1 head garlic, roasted
- 30 ounces fat-free ricotta cheese
- 1 cup lowfat mozzarella cheese
- 1 cup parmesan cheese
- 2/3 cup fresh basil, chopped
- 1 cup fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon basil
- 1/4 teaspoon nutmeg
- 1 egg
- 1 tablespoon lemon juice
- 1/2 cup skim milk

Preparation
Step 1
1. Heat oven to 350.
2. Puree garlic, ricotta, half of mozzarella, half of parmesan. Add basil, egg white, and lemon. Puree.
3. Pipe half of filling into manicotti, place in 9x13" dish.
4. Puree rest with egg yolk and milk. Pour over pasta. Top with sauce, rest of cheese.
5. Bake 40 minutes.
Excellent company dish.
Use a spicy marinara.
Add spinach to filling.
Can cut back a bit on cheese.
