Ingredients

  • 1 (28 oz.) can whole tomatoes, with juice, crushed between your fingers as you add them to the pan
  • 1/3 cup olive oil
  • 3 garlic cloves, minced
  • 6 sprigs basil
  • 1/2 cup fresh parsley, minced
  • salt and pepper to taste

Preparation

Step 1

In a saucepan over low heat cook garlic in olive oil 3 minutes.

Add tomatoes, making sure to crush them between your fingers.

Add basil and parsley.

Simmer, uncovered, until the sauce is thickened, about 10 minutes.

Season with salt and pepper.

Variation: You may add 1/2 cup chopped onion along with the garlic and saute until transparent.
