Apple, Cheddar, and Bacon Scuffins

Ingredients
- Nonstick cooking spray
- 1 egg, lightly beaten
- 1 cup whipping cream or milk
- 3 cups all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup butter
- 2/3 cup finely chopped tart red apple (1 medium), such as Braeburn
- 1/2 cup shredded cheddar cheese (2 ounces)
- 6 slices crisp-cooked bacon, crumbled
- 1/4 cup shredded cheddar cheese (1 ounce) (optional)

Step 1
Preheat oven to 350 degrees F. Coat twelve 2 1/2-inch muffin cups with cooking spray or line with paper bake cups; coat bake cups with cooking spray. Set pan aside. In a small bowl combine egg and whipping cream; set aside.
In a large bowl stir together flour, sugar, baking powder, and salt. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in apple, the 1/2 cup cheese, and the crumbled bacon. Make a well in the center of flour mixture. Add egg mixture all at once to flour mixture. Using a fork, stir just until moistened.
Spoon batter into the prepared muffin cups, filling each half full. If desired, sprinkle with the 1/4 cup cheese.
Bake for 20 to 25 minutes or until tops are golden. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups; serve warm.
