Ingredients
- 1/4 cup of lime juice, freshly squeezed
- 2 tablespoons fish sauce
- 2-5 thai chilis* or jalapenos or jarred hot ground chili paste (which will tint your otherwise lightly colored sauce a pretty red - see the pic)
- 10 garlic cloves (from a jar is just fine)

Step 1
Pour the lime juice and fish sauce in a small bowl.
Rough chop the chilis and garlic. Use a mortar and pestle to grind the chili and garlic together - or smash flat using the flat side of a wide knife or cooking mallet. Scrape into the lime juice mixture. Whisk together.
Dip a cabbage or pepper strip in the dressing, taste, and adjust to suit you.

Notes on adjusting flavor
*Make it mild! Use flavorful sweet banana peppers or mild Hatch chilis. Or try just a dot or two of the jarred ground chilis. Choose a pepper or chili that has plenty of flavor to stand up to the intensity of fresh lime juice. If you are not sure which is best, ask your produce manager to help you select just the right flavorful pepper.
Some of you may want to add a bit of sugar or salt to the mixture. Try mixing in a just a tiny bit and then taste again.
Others will want the recipe to be a great deal spicier. Add as many hot chilis as you want!
