Ingredients

  • Dressing:
  • 1 pkg. Mexican Cornbread Mix
  • 1-4 oz. can green chilies
  • Dash of Sage
  • 1 cup chopped green pepper
  • 3 large tomatoes, chopped
  • 2 cans pinto beans, drained
  • 2 cans of corn, drained
  • 10 strips bacon, cooked and crumbled
  • 1 cup chopped green onions
  • 8 oz. shredded cheddar cheese
  • 2 pkgs. Ranch Dressing mix
  • 2 c. mayonnaise
  • 1-16 oz. tub sour cream

Preparation

Step 1

Prepare cornbread mix, adding chilies and sage, and bake according to directions. Let cool, and break into chunks. Layer ½ of each: cornbread, beans, corn, pepper, onions, bacon, tomatoes, dressing. Repeat layers, then top with cheese. Refrigerate for 2 hours before serving.
