Chicken Alfredo Penne Al Forno

Ingredients
- Alfredo Sauce (double for a more saucy dish):
- 16 oz Penne
- 2 cups cooked chicken (diced or shredded) - about two small breasts
- 1 1/2 cups shredded mozzarella (4 oz) (fresh)
- 1 TBS olive oil
- 4 garlic cloves (minced)
- 3 TBS flour
- 1 cup chicken broth
- 1 cup milk
- 3/4 cup grated Parmesan (fresh)
- 1/2 tsp salt
- 1/4 tsp black pepper

Step 1
In large stockpot, Prepare pasta as directed to al dente. Drain and return to stockpot.
Heat olive oil in large saute pan over medium-high heat. Add garlic and saute one minute. Sprinkle with flour. Stir to combine. Saute for additional one minute. Slowly add chicken broth, whisking until smooth. Whisk in milk and bring to a simmer. Let cook additional one minute until thickened. Stir in Parmesan cheese, salt & pepper. Cook until cheese is completely melted. Pour over noodles in stock pot. Add shredded chicken. Stir well to coat.
Preheat oven to 375 degrees.
Spray 9x13 (or 11x7) baking dish with cooking spray. Pour half the noodle mixture into baking dish. Sprinkle one cup of mozzarella cheese evenly over noodles. Repeat for one more layer. Bake 20-25 minutes, or until cheese is melted.
