Carol's Awesome Vegetable Soup

This was very tasty & very green :) Rick prefers a soup that isn't totally pureed so next time try chopping a bit, not pureeing the whole thing.

Ingredients
- 1 carrot (5.8 carbs)
- 1 stalk celery
- 3 florettes fresh broccoli
- 1 box frozen spinach (10.5 carbs)
- 1- 14 oz. can diced tomatoes (21 carbs)
- 1/2 medium cucumber
- 1 cup vegetable broth
- 1 tablespoon fresh garlic
- 5 - 6 thin slices fresh ginger
- 1/4 teaspoon sage
- 1/4 teaspoon cumin
- 1/4 teaspoon basil
- Tabasco sauce to taste

Preparation
Step 1
Place carrot, celery & broccoli in Vita-Mix. Select variable speed 4 or 5; turn on machine for 10 seconds or until chopped.
Place remaining ingredients through ginger in the Vita-Mix container (cut frozen spinach in half or it won't get chopped up). Secure lid.
Run Vita-Mix as necessary to get the consistency you want.
Pour soup into pot, add spices & heat through.
