Here is a great tasting salad straight from my e-book called Low-Carb Recipes for the 17 Day Diet. This recipe is approved for all cycles of the 17 Day Diet as long as you omit certain ingredients.

Ingredients
- 1 chicken breast, cooked and diced
- 1 apple, diced
- 1 stalk celery, diced
- 2 tablespoon lemon juice
- 1/8 teaspoon cinnamon
- Dash of nutmeg
- Dash of cardamom
- Dash of salt
- Stevia to taste
- 2 tablespoons olive oil
- Wedge of lemon
- Favorite lettuce greens
- 1/4 Avocado, cubed (optional- Cycle 3)
- Chopped Walnuts (optional- Cycle 3)

Preparation
Step 1
Mix lemon juice, spices and sweetener in bowl. Wisk in olive oil and add cooked chicken, apples, celery and added ingredients of your choosing. Chill for 20 minutes. Serve with a wedge of lemon and enjoy on a bed of lettuce.
Cycle 3- Serve ingredients in a whole wheat pita pocket or make a wrap using a whole wheat tortilla. Add avocado and walnuts as an added flavor and texture.
Yields 1 to 2 Servings/Approved for all Cycles (see omissions above)
