Fresh Mozarella Orzo Salad

The salad is perfect for BBQs or potlucks and can be made pretty quick, making it a keeper. I know many people like Caprese salads (as do I), so next time I try it I may add a little bit of a reduced balsamic vinegar drizzled on top. Ingredients
- 1 cup uncooked orzo pasta
- 8 oz. fresh mozzarella cheese ball, cubed
- 2 plum tomatoes, chopped
- 1/4 cup chopped fresh basil
- garlic salt, to taste
- 1 tablespoon olive oil

Preparation
Step 1
Cook orzo as directed on box. Drain and let cool.
Place pasta, tomatoes, basil and cheese cubes in a large bowl. Add salt and olive oil and gently mix until all the ingredients are coated with the oil. ENJOY!
