Peanut Ginger Grilled Chicken

This is adapted from a cooking channel recipe. I altered the ingredients to suit our taste and used whole boneless chicken breasts instead of kabobs. The peanut flavor is subtle but interesting!

Ingredients
- 4 boneless chicken breasts
- 1/2 cup orange juice
- 1/2 cup smooth peanut butter
- 2 tablespoons packed dark brown sugar
- OR
- 2 tablespoons packed light brown sugar plus 1/2 teaspoon molasses
- 1/4 cup soy sauce
- 2 teaspoons minced fresh ginger
- 4 medium cloves garlic, minced
- 1 teaspoon red pepper flakes

In a large bowl or small blender, whisk together the orange juice, peanut butter, brown sugar, soy sauce, ginger, garlic, and red pepper flakes until smooth and evenly combined. Put the marinade in a resalable plastic bag, add the chicken, seal the bag and turn to coat evenly. Refrigerate and allow to marinate for 30 minutes or up to 2 hours.
Prepare the grill for medium heat with rack about 4 inches from the coals or heat source. Remove chicken from the marinade, discard liquid. Grill until cooked through 20 to 25 minutes depending on the breast size.
