Roasted Cauliflower with Cheese Sauce 0 Picture

Ingredients

  • 1 small cauliflower, in florets
  • 2 tbsp olive oil
  • Salt and pepper
  • 1 1/2 tbsp butter
  • 1 1/2 tbsp flour
  • 3/4 cup milk
  • 3/4 tsp salt
  • 1/8 tsp pepper
  • 3/4 cup gruyere cheese, shredded

Preparation

Step 1

1. Heat oven to 400.

2. Toss together cauliflower with oil and s&p. Transfer to rimmed baking sheet. Roast, stirring occasionally, 30 mins, or until tender.

3. Near the end of roasting time, melt butter in a saucepan. Whisk in flour until blended and slightly browned. Whisk in milk until smooth. Season and simmer 3 mins, whisking occasionally. Take off heat, whisk in cheese. Spoon over cauliflower, garnish with parsley if desired.

Yum! Used a fontina, which was great, but somewhat salty - careful with the additional salt. Cauliflower tastes so much better roasted!
