Ingredients

  • Combine:
  • 1/3 cup ketchup
  • 2 teaspoons horseradish
  • 1/2 teaspoon sugar
  • 1 teaspoon Worchestershire sauce
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • Stir in:
  • 1/2 pound cooked shrimp, coarsely chopped
  • For the Phyllo: butter/oil mixture
  • Optional filling:
  • 4 ounces cream cheese, softened
  • 2 tablespoons scallions, minced
  • 1 teaspoon garlic, minced
  • Pinch of salt
  • Dash of Tabasco

Preparation

Step 1

Combine ketchup, horseradish, sugar, Worcestershire, juice and salt and pepper.
Stir in chopped shrimp into ketchup mixture until coated.
Prepare 3 phyllo sheets, brushing each sheet with butter-oil mixture. Measure 2 1/4 inch wide strips and cut with a pizza whee. You should get 7 strips from a 14 x 18 inch sheet, with a small strip leftover. Place 1 teaspoon of shrimp mixture at the end of the strip and fold triangles. Bring the right corner up and over the filling until the corner meets the left side of the strip. Continue folding at right angles to the end. Seal excess phyllo at the end of the strip to the triangle, then brush entire triangle with butter. Freeze the triangles. Bake frozen triangles at 400 degrees on parchment lined baking sheets until browned and heated through, 15 to 20 minutes.

If using filling: Combine all ingredients. Place 1 teaspoon of cream cheese mixture on the lower right hand corner of each strip. Then spoon a small amount of shrimp mixture onto the cheese. (The cream cheese filling has a tendency to leak out of the triangle. If you want a neater look, omit the cheese.)
