Ingredients

  • Cream together:
  • 1 cup sugar
  • 2/3 cup vegetable oil (highly recommended to not use a substitute)
  • 2 eggs
  • Add:
  • 1 teaspoon vanilla extract
  • 2/3 cup milk (highly recommend using a higher fat content, not skim)
  • 2 cups flour (gluten free flour works great !)
  • 1 Tablespoon baking powder

Preparation

Step 1

Mix all together very well.
Divide dough into two 9" round cake pans.
Slice 18-22 Stanley plums evenly. As closely together as possible, lay plum slices in a rose pattern (as shown in my pic). Do not press into batter.

Mix:
1/2 -3/4 cup sugar
1 1/2 teaspoon of cinnamon
Spoon cinnamon and sugar mixture over plums. Bake at 375 degrees for 25-30 minutes. Toothpick should come out clean when inserted in the middle. If using GF flour, start checking cake at 25 minutes until done.
