  • 2 cans Black Beans
  • 1 Green Pepper, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 Tbs olive oil
  • 1 Tbs Oregano
  • 1 Tbs Vinegar
  • 1 bay leaf

Preparation

Step 1

In a saucepan heat oil on medium high heat and saute Green Pepper, Onion, and Garlic until tender. Add black beans and bay leaf turn down heat to simmer. Stir occasionally making sure beans don't dry out, if too dry add a little water. About 10 minutes before serving put oregano in palm of hand and crush add to beans, also add vinegar, stir in and let simmer, beans should thicken a little. Remove bay leaf and serve.
