Ingredients

  • 1 (9-inch) unbaked pastry pie shell
  • 2 eggs
  • 2 cups cream-style cottage cheese
  • 2 cups hot mashed potatoes
  • 3/4 cup thick yogurt
  • 1/4 cup finely chopped onion
  • 2 tbsp chopped red pepper or carrot
  • 1 tsp salt
  • 1/8 tsp white pepper
  • 2 tbsp margarine

Step 1

Preheat oven to 350 F.

Beat eggs until thick. Blend eggs, cottage cheese, potatoes, yogurt, onion, red pepper, salt, and pepper. Turn mix into a 9-inch unbaked pastry pie shell, spreading evenly. Dot surface with margarine. Bake at 350 F for 1 1/2 hours or until lightly browned. Serve hot or cold.
